The chef Brad McDonald is from Mississippi and everything tasted even better than it sounded: smoked pork belly with spiced pumpkin purée, dirty rice with crab, crawfish dip with cream cheese (that last one might seem pretty ordinary, but you could sup it with its accompanying toast until it was time to go to heaven).
